How To Make RED ONION RELISH - Day 16,827












Red Onion Relish

5 Pounds Red Onions, peeled, quartered, sliced thin
1/2 Cup Butter
1/4 Cup Olive Oil
5 Cloves Garlic, minced
1/1/4 Cups Brown Sugar
1 Teaspoon Red Chili Flakes
2 Tablespoons Thyme, dry, less if fresh
2 Cups Red Wine
3/4 Cup Red Wine Vinegar, or cider vinegar
3/4 Cup Port or Sweet Vermouth

Add butter, oil, garlic, red chili flake, thyme and sugar to slow cooker.  Turn on and let heat up while chopping onions. Stir sauce well, and then add onions on top.  Cook 2-3 hours then mix well.  Continue cooking for 3-4 hours more until the onions have reduced and are dark brown. Add the remaining liquid ingredients and continue cooking uncovered until the liquid has reduced to a thick sauce. Ready! Enjoy on sandwiches, burgers, turkey dinner or on a spoon.
