How To Make REFRIGERATOR PICKLES - Day 16,784



Something cool on this hot day! 










Refrigerator Pickles

4-5 Pounds Cucumbers ( I used Armenian Cucumbers)
2 Lemons, ended, quartered and sliced 1/4” thick
1 Tablespoon Yellow Mustard Seeds, whole
1 Tablespoon Black Pepper Corns, whole
1 Tablespoon All Spice, whole
1 Tablespoon Mulling Spice Mix
3 Bay Leaves, whole
4-1/2 Teaspoons Salt, kosher
6 Cloves Garlic, 2 in each jar
5 Cups Sugar, white
5 Cups White Vinegar
2-1/2 Cups Water

Wash, seed and slice cucumbers into 1/4" slices.  Place them and lemons fairly tightly into jars.  In a small bowl add all the spices and mix.  Distribute spices evenly into the jars of pickles.  Add 1 bay leaf to each jar, 2 garlic cloves and about 1 teaspoon salt per quart.  In a sauce pan add sugar and vinegar then bring to a boil.  Turn off the heat and stir to dissolve all the sugar.  Add the water and pour over the cucumbers.  Close lids, invert and allow coming to room temperature.  Then cool place in the refrigerator for 1 week to marinate.  Enjoy!
