Asian Chicken Couscous

4 Chicken Thighs
2 Cups Small Couscous, dry
4 Cups Water, boiling
4 Tablespoons Sweet Soy Sauce
2 Tablespoons Butter
1 Teaspoon Salt
1/2 Teaspoon Black Pepper, ground

In a hot pan stir fry chicken in butter, salt and pepper until hot and crisp on the surface. Add the soy sauce and dry couscous. Mix to combine the add water. Bring to a simmer and turn off the heat.  Allow to sit for 3-5 minutes. Serves 2 to 4.
