Corn Milk
5 Ears Of Corn, white or
yellow, shucked and desilked
1/2 Cup Sugar, white
10 Cups Water
Using a knife and cut all the
kernels from the cobs. Place the cobs in
a pot and add the water. Bring to a
boil, and simmer for 15 minutes. While
the cobs cook, place the kernels in a blender with a bit of water and blend for
30-60 seconds until smooth. This may
need to be done in a couple of batches.
Remove the cobs and boiling
water and add the sugar and blended corn.
Simmer for another 15 minutes then pour through a sieve or cheese cloth
to strain. The milk is complete and may
be served hot, cold or over ice.
Refrigerate when the corn milk has cooled. Should keep in the fridge for up to 5
days. Serves 6-8 servings.
