I came across this today and thought it was a great little recipe for a treat that has been near and dear my whole like. Solvang village was always just over the mountains and a great place to get some of these beauties with red jam. Here is the Better Homes and Gardens 1978 version of this treat you can try making at home! Love to know how your turn out! R-
2/3 Cup Packed Biscuit Mix
1/4 Cup Milk
2 Egg Yolks
2 Tablespoons Sugar
1/8 Teaspoon Ground Cardamom
2 Stiffly Beaten Egg Whites
Butter or Margarine
Powdered Sugar
In mixer bowl combine first 5 ingredients;
beat at low speed with electric mixer till mixed. Fold in egg whites. Grease cups in aebleskiver pan* with butter
or margarine. Heat pan over medium
heat. Fill cups 2/3 full of batter. Cook till bubbly, 2 to 3 minutes. Gently turn with 2 wooden picks. Cook till done, about 2 minutes more. Sprinkle with powdered sugar. Grease cups and repeat with remaining
batter. Makes 12 to 14 aebleskiver (4
servings). * Or, cook batter on greased
griddle using 2 tablespoons batter per pancake.
